Bob's Red Mill textured vegetable protein, once rehydrated, provides a great substitute for rice, based on its chewy texture and appropriate size (I've bought other brands but the pieces are much larger and less rice-like). I've added it to soups (with spices when rehydrating) and made faux rice pudding (plenty of cinnamon & nutmeg). Next, I'm going to try making stuffed peppers!

Great as a breakfast cereal with skim milk, splenda, and a little cinnamon.

This is a great rice replacement. It soaks up the taste of whatever you serve it with. I use it in a lot of oriental dishes.

Bob's Red Mill TVP works great with beans and other items to make great vegetarian dishes. Even my non-vegan husband eats this when made into a meatloaf or bean burgers. Great stuff, easy to work with, and tasty.
